We want to get our snacks into the goodie bags given to attendees of mindfulness conferences around the country and are trying to figure out the points of access within an organizing committee to target.

I know as a general rule of thumb, the size/popularity of the event is directly proportional to SWAG possibility. At larger events, companies will pay to put their items in swag bags. Smaller events will want these items as a donation, or maybe you can trade product for ad space? Teacher training sessions might be a good place to test out small space swag bag inclusions.
There are a lot of local yoga and mindfulness happenings that you could start with too. The UVA Center for Contemplative Sciences (my partner David teaches yoga in their Mysore program - I can connect you guys if you want to talk to him) and the Mind Life Center which is a really amazing center not affiliated with UVA that does research into mindfulness practices and their applications. Plus all the yoga workshops, etc that go on too like Floyd Yoga Festival (which I think is around Labor Day and might be a good place for you guys to actually set up a booth?).
